Cosi Salad

Romaine Lettuce (1 bunch)

Mixed greens (1 bag)

Grated carrot

Thinly sliced radish

Shelled pistachios

Dried cranberries

Red Grapes- cut in half

Gorgonzola (or Feta or fresh grated parmesan)


Mix greens, carrots and radish together and
add nuts, cranberries and cheese to taste.

Dressing

½ cup vegetable oil

2 tbsp white sugar

¼ cup red wine vinegar

1 clove garlic (minced)

¼ tsp salt

¼ tsp paprika

pinch black pepper



Foccacia Bread

1 package dry yeast

2 C warm water

5 C bread flour

1 tbsp sugar

1 tsp salt

¼ C olive oil

Dissolve yeast in 1 cup warm (not hot, otherwise it will kill the yeast) and sugar, let sit for 10-15 minutes.

Mix in 2 C bread flour and remaining 1 C water and salt. Gradually add remaining ½ C or so of bread flour until dough is well combined. Add olive oil and at this point, you will need to mix by hand. Knead until dough is nice and smooth.

Set aside and let rise for at least 1 hour.

Spread out on parchment lined baking sheet and top with olive oil and any herbs. We usually do a touch of sea salt and oregano or our favorite garlic seasoning mix.

We use this recipe for homemade pizza dough too but just cut the olive oil down to about a tablespoon or so. You could also replace some of the white bread flour with whole wheat or add seeds/nuts to the mix.
